hi just found a single egg just wanting to know what it should look like if its a good one

Oval shaped, plump and white.

its abit off white and soft

They are parchment shelled (soft-ish shells) but should still have a 'solid' like appearance. Collapsing or dents are not a good sign.

Don't give up on it. Give it some time in the incubator. Should is collapse even more, become foul in smell and discolouration and develop a hair like mould, discard it.

Candle it, Hold a small LED light up against it. If you can see veins or it glows a pink or red colour then it is good.
