don't knock it till you try it, in Asia you can have either rice paddy frogs or imported American bullfrogs (bigger legs, i.e. more meat), usually cooked with sweet soy sauce and butter or chucked into porridge or soups, it's a rather cheap way of having protein especially in a third world country like most of SE Asia. Also helps with the fact that it's darn tasty and lean.

p.s. any meat that's cooked too long will inevitably become chewy

taste alot like chicken, texture wise more like fish... reminds me abit of croc actually

oh and another fun fact, look up Hasma on google, the wiki article is pretty spot on, and is quite a prized (and expensive i might add) ingredient

But back to the thread that's frogs, with bufo i'd reckon you need to remove skin and glands, either that or try to neutralize the poison in some way (i've also seen dried toad skins for sale in chinese medicinal shops, if i had a guess it's gonna be for soup)

In Chongqing in Western China is a small restaurant that only sells frogs
I was there one night and an escapee from the kitchen hopped under out table
So I picked it up and sat him beside my plate so he say goodbye to his brother or whoever
The people I was with were absolutely horrified
Put them right off their tucker

In Guangzhou there is a top class fish restaurant beside the river
Huge tanks with pretty impressive fish
other tanks with crocs and snakes of all types
guy we were with is big time chinese wealthy, megabucks type thing
kept pouring the brandy into me because he knew Id go off about the snakes eventually
had to happen so Ive grabbed out a decent sized boa and wandered around the restaurant
great fun and loads of nervous people
Management tried to stop me and his bodyguard just said two words and they shut up quick smart
helluva night
lasted 3 days and even though my passport was locked in my hotel room I woke up in Macau
Missed my plane to LA and never regretted one minute of it
 
Had to go with frog in Cambodia as they were out of crocodile at the time. From memory, I didn't enjoy the experience. For no other reason than they were overcooked and really dry. Taste-wise, had a lovely subtle flavor hidden under the spices!
 
er, Ive been cooking and eating frogs legs since I stared my cooking apprenticeship back in the 70's. There isn't much in the ingredients of Asian cuisine thats not used in European. Its just fallen out of favour or fashion.
I buy frozen frogs legs from a couple of Asian grocery stores.
 
Does anyone watch the show "Bizarre Foods"? He came to Australia for an episode and ate them. The chick said that as long as the glands are removed they are ok to eat. Not sure if what Leamos said is true though and it's only ok to eat in small doses

I saw that one too. I remember they skinned the legs and were careful about not getting the toxin on it....

I'd give them a go..... love frogs legs.
 
It was suggested a while back that cane toads were being considered as an export to china. The Chinese were keen on using the cane toads for meat and natural medicines.
I thought this was a great idea, cane toads being exterminated and Australia making a profit from it. It would do is strengthen are import/export business with china and give us a bit of extra coin.

or used instead for maccas chicken nuggets. hey rat mean, frog meat, same thing eh give or take?
