I have just got a Darwin python, he is 3 months old and the breeder told me he is eating pinkie rats. I have just fed him this afternoon and he wolfed it down in under a minute and the buldge had almost gone not long after that... Should I consider a larger food item or keep him going on the pinkie rats????

IMO
Your feed should leave a buldge 1.5 times the girth of the snake.
If your snake will eat 2 of the feeds you are giving then give 2 pinkie rats instead of 1.
I would upgrade to weaner rats and see how it goes on the first feed.
If the weaner leaves a huge bulge then stay with pinkies but from what you have said and without seeing the snake I would bump up to weaners.
