Why breeders sell yearlings?

Cheaper to sell them straight away without having to feed them for a year.

That may be true if you are doing it for the money, but if you want to sleep at night the less problems created the better.

I reckon the best ones to get are yearlings, this way they are usually calmer, better feeding and you get to see their true colours and markings...

True. Especially with GTPs, buying yellow hatching, you just don't know what you end up with.
