Hey just looking for abit of advice as my coastal shed last night and he still has patches on him and about a quarter of his body left. Because he has obviously had a bit of difficulty last night as there is small bits of shed throughout the tank. It is also feeding day today for him, should i hold of a on food and should i not handle him????

Soak him in a warm bath for a couple of minutes, then get a wet towel and put it over your and and grab him firmly above the bad shed section and allow him to slowly slide his way through your hand.
The wet towel will grip the skin and peel the shed off as he slides out.
I use this method when ever i get left over shed on my snakes.
After you get all the skin off you can feed him as usual.

Sounds like the humidity may be a bit low, you got a big enough water bowl in his tank that he can fully soak in? A nice tepid bath should help soften the left over skin he is still needing to shed, enough so he can slough it off himself. Give him a feed after he completes his shed, it can wait.

grab a humidity meter and put it in the enclosure , just to see what the humidity level is at .

Hit the nail on the head.
Although there is another option, after following Bez84s advice instead of used the towel method you could put the snake into an inside out wet pillow case which will allow the snake to do the same thing as it slithering through the towel.

I use the bathing technequie but never liked using anything other than my hands. If you do use a pillow case turn it inside out so there are no dangerous threads
