Incubation question

I have a small Esky incubator set up.

Every couple of days I open up the container and get rid of the condensation to stop it from getting to the drip off point....

Should I be adding that water back into my vermiculite mix?
If so do I just slip it back down the side?.... or just mist some water back into the container?

or just leave it on the lid?...............

Clean the moisture off (wipe it) and dont add anymore water no need too cheers

Just had the thought that by the end of the incubation it might be leaving the water content in my substrate a little bit depleted....
