We use a suspended light up one end of the enclosure, and the tubs are never fully underneath it. I've used a probe, and there is definitely a gradient there 
edit: since it's so dry here too, I've found putting a dinner plate on some coiled up heat cord inside there with water on it helps to keep the humidity up. Outside it's around 47% at the moment, so spraying doesn't seem adequate by itself.
